The Carolina Health Specialists are on a mission to help people break free from all forms of disease through the power of healing. Each how-to guide in our magazine is based on recommendations by these experts who understand how important it is for every patient to improve their overall health before they worry about losing weight or improving cholesterol levels by taking medications.


Our goal is to help people achieve the best possible lifestyle without being dependent on medications. We believe all diseases can be prevented if one is willing to make the changes that are crucial for optimum health. In this issue, we are featuring stories from doctors and dietitians, who have been featured as experts in our magazine in the past, and who share their knowledge with you. They believe it is the mindset that has a direct connection with the body. They also believe that there is an emotional component involved which needs to be addressed at every level of wellness.


How long do I need to follow these guidelines before I can expect to see results?


It's different for everyone, but we recommend at least three months of eating the right foods and doing moderate exercise three times a week before you begin to see actual results. The important part is to make these changes permanent so that you aren't putting on the weight again. To ensure your success, ask someone close to you to be your support buddy and help hold yourself accountable for sticking with the plan.

What if I don't like fruits and vegetables? Can I still lose weight?


Yes! The key is finding a way of eating veggies that feels satisfying and adds texture to your meals. The two foods I've found to be the most helpful for getting people to like fruits and vegetables are roasting and raw vegetable toppings. All you need is a food processor or a good blender and some fresh produce, plus these tips for eating fresh produce:


•Don't overcook your vegetables—roasting them in the oven is a quick and convenient way to add different textures and flavors to all kinds of healthy dishes.


•Try tossing vegetables in lemon juice, olive oil, and garlic (see Veggie-Tastic Roasted Broccoli with Garlic, below). For example, try this with asparagus or green beans. You can grill veggies too! This method accentuates their natural flavor.


Veggie-Tastic Roasted Broccoli with Garlic


2 bunches of broccoli (about 3 pounds)


1 tablespoon olive oil


2 cloves of minced garlic, or to taste (or ¼ teaspoon garlic powder)


Salt and pepper, to taste (use a fine-grain sea salt, such as fleur de sel)


3. Salt and Pepper each piece of broccoli for about 2–3 minutes on each side. Remove from the oven and let cool for about 2 minutes before serving. 

 How much weight can I expect to lose?


We recommend that patients start at the upper end of the range and then slowly work down. The optimal range is between one-half to one pound per week. If you are already at your target goal weight, you can consider slowing your weight loss rate until you reach your new lower body weight. Each of our experts has good health results in his or her own body, so it's important not to let other people's weights goad us into thinking that we need to do more exercise or eat less food. While making healthy dietary changes is often challenging, there are ways to make it easier if we are willing to pay the price and commit ourselves to a full month of success.
